When LIFE :STYLE magazine took a culinary tour of OswaldtwistleMills, we started inYe Olde Sausage Shop – themulti-awardwinningmeat counter where qualitymeets creativity.Their freshly-made sausages are ordered fromcustomers across the UK; hungry for a choice of between 12-14 varieties each day. Co-owner and lifelong butcher MartinTeese is even happy tomake bespoke bangers upon request. “We have one customer who likes his sausagesmuch spicier than I could sell them,” saysMartin. “He bringsmewhat must be the ‘hoest chilies on the planet’, and then I make himup a batch. “Other people bring in ingredients like cheese and beans to go in a sausagemix, or one lady blanches some broccoli and fetches it in with some stilton cheese tomake a very nice porkmix.” Martin and his award-winning team, have created freshly preparedmeals for people on the go. “Each ismadewith high quality ingredients with a full depth of flavour. Certainly not your typical ‘readymeal,” he says. He finds his inspiration everywhere – and the latest creation came aer watching The Great British Bake Off. “I adapted a dish I’d seen on the show. Making up a fresh batch of basil pesto I spread it over a sheet of puffpastry then laymaple streaky bacon across tender chicken and toppedwith spinach before rolling and cuing into small parcels. Simply delicious.” Alongwith locally-reared free range geese, ducks, turkeys, chicken and lamb; Ye Old Sausage Shop has an impressive range of low fat sausages, burgers, meatballs and kebabs which are packedwith flavour. The ‘Slimmers Choice’ rangematches their full fat counterparts in the taste department thanks to a secret recipe of delicately balanced spices.The ingredients have remained exactly the same since they were first designed – offering total peace of mind to thosewatching their waistline. Over at the Crumbly Cheese Deli, assistant Anna Steele is helping a customer to fill a beautiful hardwood cheeseboard she has bought elsewhere in theMill.The oak plaer brims with a selection of British and French cheeses, Lancashire-made preserves, crackers and a complementary bole of wine, before being beautifully giwrapped for the customer. Says Anna: “These bespoke hampers work really well for our customers. They will buy their board or basket fromone of the shopping departments and then bring themhere for us to fill with their choice of products.Theymake fabulous gis. I did a gluten free hamper yesterday which looked lovely.” There are 40 local and international cheeses on display including Lancashire Crumbly and Creamy, Smoked Lancashire and Blacksticks Blue; made at Butlers Farm in Preston. Adds Anna: “There are your traditional flavours - Black Bobwhich is extramature, then

blended cheeses like caramelised onion and sticky toffee heaven or garlic, then they go a bit crazy like the chilli, lime and tequila, or Parma Violet ones!” For coffee lovers, the deli now stocks Beanies– an absolutely delicious range of flavours and surprisingly very low in calories. They are presented in theMills’ crabags and labelling tomake a lovely giwhich won’t break the bank.The top sellers are cookie dough (only 2 calories per cup), Irish cream, amareo almond, cinder toffee, chocolate orange, mint chocolate andmulledwine.There aremanymore flavours to entice you. At the deli you will find an unrivalled range of speciality products, including pasta, cakes and pastries; suitable for gluten-free and sugar-free diets. Andrew Jones’, Clayton Park and Cissy Greens are some of thewell-known names supplying a tasty selection of pies and pasties. Says Anna: “Since the street food revolution came to the UK, we do get increasingly ambitious requests from younger people especially. But we always stock the traditional foods our customers know and love.” Gluten freemuffins and cakes are in growing demand – and theMills’ Facebook Page is constantly updatedwith newproducts on offer.
